This morning, while one of my daughters was tucking into the usual bowl of over-sugared cereal, another daughter chose an altogether healthier, and somewhat surprising, alternative.
I watched as she diligently prepared the ingredients and tucked into a breakfast that is good enough to eat at any time of the day (or night).
Years ago, I worked on a farm that grew avocados. In season, we used them like butter, spread on everything.

- Avocado
- A lemon
- Bread for toasting
- Salt and pepper
Set
- Toaster
Go
- Toast the bread.
- Half the avocado and scoop out its flesh and spread it liberally on the toast. Don’t be neat.
- Squeeze some lemon over the avocado mess and season with salt and plenty of cracked pepper.
