Recipe for Fried Squirrel

Just for fun, I’ve been thumbing through my Grandmother’s “The Household Searchlight Recipe Book” that her mother (my great grandmother) gave to her in 1941. I just had to share the recipe for fried squirrel – just in case you’re ever isolated in a disaster, and have to resort to eating the local fauna.

Ready

Set

Go

  1. Dress squirrel.
  2. Wash thoroughly.
  3. Cut in pieces for serving.
  4. Cover with salted water.
  5. Let stand overnight.
  6. Drain.
  7. If squirrel is not tender, parboil 10 minutes.
  8. Drain.
  9. Roll in flour.
  10. Fry in cooking fat until tender.
  11. If the squirrel is young, parboiling is unnecessary.
  12. Make a brown sauce.
  13. Serve squirrel garnished with lemon slices and parsley.
