Chick-Pea Nibbles

These are great for parties or a great snack.

This recipe will make about 6 cups.

Go

  1. Drain and rinse chick-peas.
  2. Blot dry on paper towels.
  3. Set-up for flouring: place flour in small bowl.
  4. In another bowl, beat eggs and water.
  5. In third bowl, place bread crumbs.
  6. Working in small handful batches, roll chick-peas in the flour, place them in strainer and shake off excess flour.
  7. Drop them into egg and stir to coat.
  8. Remove with slotted spoon and drain briefly.
  9. The last step, roll them in bread crumbs to cover lightly.
  10. Place on baking sheet and let stand for about 8 minutes.
  11. Continue until all the chick-peas are coated.
  12. Heat oil to 375°F.
  13. Quickly drop small batches into oil and cook until they are a golden brown.
  14. Remove with slotted spoon and drain on paper towels.
  15. Repeat until all chick-peas are fried.

What you should know

For a spicer mix, add curry or other seasonings to flour.
