Lemon Basil Chicken

I totally forget the origins of this recipe other then someone in my family. I’d guess it came from a book, but it’s so simple and fast to make, once you’ve read it, you don’t really need the recipe!

Go

  1. Chop the chicken into pieces (I typically go for bits about the size of my thumb or smaller)
  2. Mix all four ingredients in a bowl
  3. Toss in the chicken and let it sit in the fridge to marinate for a bit (I tend to leave it for 20 mins or so)
  4. Broil the chicken on the baking sheet (with the marinade too, it helps keep it moist) for ~ 7 minutes a side, or until it starts browning
  5. Grill the chicken based on your grill settings, hotter is better to sear in the juices/flavour from what I’ve found

What you should know

This produces a fantastic piece of chicken that can be used hot or cold with a massive number of things (Pastas, salads, sandwiches).

It’s super fast to make / cook and always a crowd pleaser. Perfect for kids to mix up as well while you’re chopping the chicken ;-)
