I totally forget the origins of this recipe other then someone in my family. I’d guess it came from a book, but it’s so simple and fast to make, once you’ve read it, you don’t really need the recipe!
Ready
- 2 chicken breasts
- 2 tbsp soy sauce
- 2 tbsp dried basil
- 2 tbsp lemon juice
- 2 tbsp oil (Take your pick as to type)
Set
- Oven or grill
- baking sheet
Go
- Chop the chicken into pieces (I typically go for bits about the size of my thumb or smaller)
- Mix all four ingredients in a bowl
- Toss in the chicken and let it sit in the fridge to marinate for a bit (I tend to leave it for 20 mins or so)
- Broil the chicken on the baking sheet (with the marinade too, it helps keep it moist) for ~ 7 minutes a side, or until it starts browning
- Grill the chicken based on your grill settings, hotter is better to sear in the juices/flavour from what I’ve found
What you should know
This produces a fantastic piece of chicken that can be used hot or cold with a massive number of things (Pastas, salads, sandwiches).
It’s super fast to make / cook and always a crowd pleaser. Perfect for kids to mix up as well while you’re chopping the chicken ;-)
