Avocado Ice Cream

I always like to try something different. This was a very good and interesting surprise. I always love to see the reactions of people before and after they try this. This recipe makes about 1 pint.
Ready
- 2 avocados (about 8 oz each)
- ¼ tsp kosher salt
- ½ cup superfine sugar
- 3 Tbsp fresh lemon juice
- ½ cup heavy cream
Set
- Ice cream machine
- Food processor
- Knife
Go
- Peel and pit avocados.
- Cut into chunks and puree in food processor.
- Add remaining ingredients and process until incorporated.
- Process according to ice cream machine manufacturer’s settings.

I always tell my kids not to knock something till they try it. Well I finally tried this and loved it. My kids love it too. It’s easy to make.

This was a good ice cream recipe. It is great for dinner parties. My guests were definitely surprised. I had some store bought ice cream in the freezer just in case, but it was not needed.

John, this looks great… can’t wait to try it. I was at a dinner party some years back and was served avocado soufflé as a dessert. It was delicious. Have you come across it before?
